About this bar

Zest opened in December 2020 on a Cheongdam street front, rare in a city where serious cocktail rooms usually hide in basements. Co-founders Dohyung Demie Kim, Sean Woo, Jisu Park, and Noah Kwon built the room around a literal reading of the name: zero waste, from house sodas and spirits to menus printed on compostable stock. How Zest builds zero-waste cocktails

The name is a portmanteau of zero and waste, and the philosophy runs from the glass to the back office. The team makes its own sodas, citrus stocks, and spirits in house, upcycles peels and pulp into new ingredients, and sources honey and produce locally in reusable containers returned to suppliers. Hallabong oranges from Jeju are squeezed for juice, redistilled into gin from the peels, and fermented from the remaining pulp.
