The menu splits into roots, fruits, leaves, and flowers, with 12 cocktails that state their main ingredient in the name. Order Betel for the house style at its most Indonesian: betel-infused rum, umeshu, lemon verbena aperitivo, and pickled betel leaves in a refreshingly vegetal serve. Pohpohan uses locally sourced pohpohan leaves with juniper mint liqueur and limeade cordial for a minty, citrus lift. Celery is Bule's savoury martini with celery vodka, bergamot, and MSG dotted with celery oil, while Tomato reframes a Bloody Mary with whisky, Tabasco, and wasabi spirit.
